Fish Tacos are the ultimate test on a restaurant (that have them on their menu, it goes without saying). If they don’t fry the fish, they immediately gain my respect.

Opinion on cooking steaks

The worst thing a restaurant can do is serve an overcooked steak. Medium-rare means it still juicy and red inside. Per the Wikipedia definition: “warm red center; firmer”.

I’m polite and respectful of the value of food, and will not send the meat back. But I will probably leave a review on Yelp and probably NOT go back to that restaurant.
